How to Make Chicken and Gnocchi Soup - Just Like Olive Garden

Olive Garden's chicken and gnocchi is a rich, thick soup that can serve as a full meal. Many of the copycat recipes on the Internet suggest using the potato gnocchi sold in stores, though it's possible to make your own. It's also possible to use turkey instead of chicken in this recipe. Instructions

    Prepare the gnocchi according to the package instructions.

    Saut the onion, celery, garlic, spinach, carrots in the olive oil till the onion is nearly translucent.

    Add the chicken, chicken broth, and spices and bring the mix to a boil.

    Slowly add the gnocchi to the boiling broth.

    Turn down the heat and let it simmer for about 10 minutes. For a thick soup, add 1 tbsp. of corn starch to the cream before you add it into the broth. Add the cream, then slowly allow the mixture to come to a boil again.

    Serve the soup in heated bowls.
